| Fresh Beets |
Ingredients
2 (15 ounce) can sliced beets, drained with liquid reserved1/2 cup pomegranate in red wine vinegar
1/2 cup Demerara sugar
4 - 6 whole cloves
1/2 whole cinnamon bark
Kosher salt to taste
Medium red onion sliced
3-4 garlic cloves - fresh or pickled from salad bar
2-3 hot peppers optional
Directions
In a saucepan, combine the liquid from the beets, garlic, peppers, vinegar, sugar, cloves, cinnamon and salt. Stir to dissolve the sugar and bring to a boil. Simmer over medium heat for 15 minutes - until fragrant. Add a few slices of onion and one clove of garlic and simmer for 5 more minutes. Layer beets, onion pepper and garlic in a glass jar or bowl. Pour the liquid over them to cover. Cover and cool to room temperature. Refrigerate until serving.Ingredients
